Belgium Biscuits and Raspberry Jam

Day 4 (27/04/2011)
After a very long day, and very little sleep thanks to my cat mushrooms meowing, I still managed to crank out a batch of Belgium Biscuits, I had been thinking about them ALL day……not only did I make the biscuits, I made the jam to go inside (and the icing on the top! except the icing doesn’t count as a recipe as its only water icing not the icing listed in the book…bum.)  but at least I got two recipes down,  Belgium Biscuits page 35 and Raspberry Jam, page 228.  Oh they are soooo yummy too!! Om nom nom !
I do want to mention that the biscuits are better thin, as you have two bikkies together. I made a bunch of options to see what was best, hearts sandwiched together with jam topped with icing, single hearts with jam and icing.  Gingerbread men with jam and icing…they all tasted really good and now I can’t decide!!

  2. Good stuff Jody!!! did you make thin ones? Im going to give this recipe another go cos they were so YUM and try them thinner so they are a bit crunchier... :D

  3. no mine were quite thick and i just filled with icing not jam but so good am definitly going to be making again.. You should take photos of the things you make, I love looking at food pictures :p
